Trotters from Karen's recipe book


12 Trotters
1 tsp Jeera
1 small piece ginger
4 tsps ghee
10 cups of water
15 pepper corns
5 pods of cardamom
5 onions
1 tsp turmeric
a little tamarind
salt to taste


Clean, cut and cook trotters in plenty of water.
Grind the above masala to a fine paste.
Heat ghee and fry 1/2 onion sliced, put masala and brown.
Then add tamarind water, salt to taste and trotters.
Simmer for an hour till gravy is thick.
