Chicken Bhartha by Miriam D'Souza


500 gms chicken

1 1/2 tsp Corriander seeds whole
2 red chillies
3 Onions
10 cloves of Garlic
1 inch Ginger
Red chilli powder
1 Tomato (Pureed)
Garam masala
1/2 tsp mango powder
1stp corriander power
Salt to taste
Corriander leaves
Fenugreek leaves


Cut chicken into small strips.

Put corriander seeds whole, red chillies (break into pcs) on tava. Do not brown. Crush dhania in pestle and break red chilli with hand.

Heat oil and add onions and cook till brown

Add crushed corriander seeds, garlic and ginger. Stir.

Add red chilli pdr and fry for 4-5 mins

Add Tomato puree and crushed red chillies. Fry 4-6 mins

Add salt, garam masala, mango pdr, dhania powder and cover and cook for 6-8 minutes on low heat. Add whole green chillies. Cook till done and garnish with corriander leaves and dry fenugreek leaves.
