Quick Rogan Ghosh by Bernadette Nazareth


1 kg mutton or lamb meat
1/2 kg tomatoes
1 cup curds
2 tsp chilli powder (use mild chilly pwd)
2 tsp sugar
3 tbsp ghee

Masala to be powdered

1 tsp jeera/cumin seeds
8 cardamoms
4 pieces cinnamon
10 cloves


In a pot/deckchi heat ghee. When ghee is hot add sugar.

When sugar melts and turns browns add the mutton/lamb meat and fry well till brown.

Add peeled and finely chopped tomatoes and curds. Mix with salt and chilli powder.

Cook on slow fire till meat is tender.

Before serving add powered masala and give it one good boil,

Serve with roti/Nan/chapattis.
