Athena's memory of Karen

On one of our visits to Canada, Karen had invited Bathie, Sandy, Roy, Andrea, Shaun, Suraj and myself to dinner. She had made this delicious spread of Kube suka, Pathrade curry, Kori Kachpu and bimbli saar. The food was exceptional. Needless to say, we all over-ate. Roy and Ajesh could not get enough of the chicken. They ate and ate and ate! We, to this day talk about that meal and the wonderful time we had! On our return , I asked Karen for her recipes and she sent me her Kori Kachpu and Pathrade curry recipe which is how I came to have and enjoy them all these years.
