Eggplant and Dry Shrimp by Yvonne Pereira


3 Eggplants (Brinjal/Aubergine ( cut in small pieces and soak in water)
3 Green chillies
1 Tomato
3 medium Onions
2 pods Garlic
1 inch Ginger
Dry shrimp


Add Oil in a vessel and season with curry leaves and finely chopped Onions, Green Chillies, Garlic, Ginger, Tomato.
Add the Dry Shrimp
Add the cut Eggplant. Add 1/2 glass of water. 1/2 tsp Turmeric powder and Salt to taste.
Cook on slow fire till Eggplant is cooked.

Tip - A few of Cumin seeds while seasoning tastes good.
